How to make your pizza/country dough using a stand mixer (youtube)

Recipe I used in this video: for Pizza making
oven temperature: 220 degree celsius 500g bread flour 6g sugar 10g low sugar ratio yeast (means yeast for lean dough) 94 eggs without the shell 256g water (room tempertaure: base on Singapore weather condition) 8g salt Step 1: mix dry ingredients together except the salt Step 2: add all liuid into the mixer to blend/mix at slow speed Step 3: add salt Step 4: once the dough comes together mould it into a round shape and proof for 30 minutes Step 5: I split into 6 dough and mould it round and rest for 15 mintues Step 6: flatten the dough as shown in video and rest for 15 minutes and par-bake for 5 minutes Step 7: cool the dough and assemble the pizza and bake for about 10-12 minutes till golden brown or to your preference.
