Strawberry & Lime Jam making
Recipe created by Pauline Chan (dated 9April'14)

Recipe/method:
600g of strawberry wash & cut (without the stem and leaves)
200g of fine sugar
100g of Lime Juice (or you could replace with 1 whole lemon juice)

mix these together and leave it on yr kitchen counter or refirgerator for 30-40minutes

when you start cooking, the fire will start at medium or high so that you could continuously boil the mixture.

As the mixture foam up... skim off the foam.

this orange/ yellow foam must be from the lime.

The strawberry could be cook on its own without any other fruits.

After waiting and boiling for 30 minutes, the strawberry start to thicken and gel up. 
NOTE: if the gel harden up, it means over cook.

cool the jam and pack as shown
